At least you're not bitter
eh, i was testing myself. as the older chef i'm training for our new store in Louisville said, this is not a business for folks his age (he's 56). he continued to say that "you better find yourself settled and sticking with a company for the rest of your working days by the time you reach your mid-40's. this business is too youth oriented." so basically i guess it's time to stop fucking around and start writing that first best seller. ha.
as a complete side note, i had to give the "buy in" speech to his sous chef last night, knowing that the odds were that he wasn't going to make it. added bonus: i had to sit in on my corporate chef giving him the axe. this business ain't pretty sometimes.
shit, it's never pretty in the kitchen.
