got nothin'. not song, been listening to classical today, especially when putting in the numbers for inventory. it seemed the right thing for the situation, as i'm not even supposed to be at work either yesterday or today (uh, 12/31 and 1/01).
went in on NYE because i got the call the day before, We Can Get Inventory Done Today, switch your days off and all will be good, my chef says. i wanted to call bs but the needs of the business...and yes, i ended up in the pivot on the line for the entire 5 hour brunt of our NYE reservations.
funny thing is, it was fun. granted the people that we had in for dinner were asses, but everything was smooth. made me miss my claddagh days and even more, just working the line myself at joe's.
but i didn't get off the line until 10 on NYE, and at that point all we had done was print the inventory sheets. showed up NYD shortly after 9 and did nothing but inven for the next 8 hours. granted i wasted a lot of time, but it was end of year and needs to be down to the wire with everything exact.
labor for the week: 20.6%
food cost: 27.7%
kitchen budget: 48.3%
i knew what my chef was doing with the ordering the past couple weeks, but the evidence wasn't there until last sunday when we posted a 28%...make up for all the overages from the past few months. it's not like our prime has been bad, it's just that it's been over enough that we needed a few weeks of being severely under just so...we could hit bonus for the year.
and i think we did.

spent xmas in bed, in a ball, stomach was killing me, and just to make it that much better i killed my phone the night before. no numbers copied down. no nothing. couldn't get a replacement 12/26, nothing in stock, they rigged it so i could access my phone, with no ability to call out or internet. sometimes txting worked, sometimes email worked. still waiting for replacement.
i'm a good customer, dammit! i demolish phones every six months!
